Ingredients
  

  • 1-1/2 Cup All-Purpose Flour
  • 2/3 Cup Sugar
  • 1 tsp Baking Soda
  • 1/4 tsp Ground Cinnamon
  • 1 Large Egg
  • 1-1/3 Cup Ripe Mashed Bananas Around 3 medium bananas
  • 1/3 Cup Butter (Melted) If you're using salted butter, you can leave out the 1/8 tsp of salt
  • 1/8 tsp Salt
  • 1 tsp Vanilla Extract
  • 1/2 Cup Chocolate Chips (semisweet)

Instructions
 

  • Preheat oven to 375F
  • In a large bowl, thoroughly combine the flour, sugar, baking soda, cinnamon, and salt using a whisk. In a separate bowl, whisk together the egg, bananas, melted butter, and vanilla until the mixture achieves a uniform consistency.
  • Add wet mixture into dry mixture and stir until moistended.
  • Fold in chocolate chips.
  • Fill greased or paper-lined muffin cups, filling each about three-quarters of the way up. I like to use an ice cream scoop! Bake for 17-20 minutes; you'll know they're ready when a toothpick inserted in the middle comes out clean. After taking them out of the oven, let them cool in the pan for 5 minutes, then transfer to a wire rack. They are best enjoyed warm!
