These banana muffins boast a tender and buttery texture, accentuated with a hint of cinnamon. Enjoy them as they are, or elevate the flavor with additions like chopped walnuts or chocolate chips. Beginning with 3 large ripe bananas and some staple kitchen items, you're well on your way to creating this delightful treat.
1-1/3CupRipe Mashed BananasAround 3 medium bananas
1/3CupButter (Melted)If you're using salted butter, you can leave out the 1/8 tsp of salt
1/8tspSalt
1tspVanilla Extract
1/2CupChocolate Chips (semisweet)
Instructions
Preheat oven to 375F
In a large bowl, thoroughly combine the flour, sugar, baking soda, cinnamon, and salt using a whisk. In a separate bowl, whisk together the egg, bananas, melted butter, and vanilla until the mixture achieves a uniform consistency.
Add wet mixture into dry mixture and stir until moistended.
Fold in chocolate chips.
Fill greased or paper-lined muffin cups, filling each about three-quarters of the way up. I like to use an ice cream scoop! Bake for 17-20 minutes; you'll know they're ready when a toothpick inserted in the middle comes out clean. After taking them out of the oven, let them cool in the pan for 5 minutes, then transfer to a wire rack. They are best enjoyed warm!
